Roasted Tomato, Garlic & Basil Sauce

Serves 4
Preheat Oven to 400.
In a baking pan, combine cherry tomatoes, garlic, basil, olive oil, saltand pepper. Bake in 400 degree oven until tomatoes are cooked
through and beginning to brown. Meanwhile, cook pasta in salted water.
Transfer cooked pasta to a warm serving bowl. Top with tomato mixture and toss. Add parmesan cheese and toss again.
Serve with crushed red pepper on the side.
- 1 lb. cherry tomatoes, halved
- 1/2 tsp. salt
- 4 cloves garlic, finely minced
- 1/2 tsp. pepper
- 24 basil leaves, finely chopped
- 1/2 cup grated Parmesan cheese
- 1/3 cup extra virgin olive oil
- 1 lb. Fasta egg fettuccine
